I like to remake leftovers into something completely different and make him think, "Huh? Is this the one from the other day?" I've gotten so proud of myself that I feel like I've taken on a queenly air...! What? What kind of queen? Well... like sticking my face in the fridge and freezer and grinning?
When I use leftovers, I also get into the table coordination. This time, I went for an exotic izakaya? atmosphere.
Here's what it turned out like.
I wanted to use the Baccarat glass that Chiporin gave me, so I made a grape and blue cheese salad.
In the steaming basket is the leftover meat from a roast chicken, with Tokyo leeks, shiitake mushrooms, and chicken that was attached to the bone on the bottom. I steamed that.
On top is a leeks and salt sauce made by slowly frying leeks and ginger in rice oil and adding red sea bream dashi salt. I also added some chili threads for color.
I put some leftover smoked salmon from the last time I entertained guests on top of my salad. A dressing made with yuzu and noodle soup gave it a Japanese flavor.
His was prosciutto, and this was leftover beef stew. The stew takes on a Japanese flavor when served in a different bowl.
